1. Preheat oven to 350°F (175°C).
2. In a bowl, whisk together ½ cup water or milk, 2 eggs, ¼ cup melted butter or
coconut oil, and 1 tsp vanilla extract.
3. Add the dry muffin mix and stir until just combined (do not overmix).
4. Pour batter into a greased muffin tin or lined cups.
5. Bake for 18-22 minutes or until a toothpick inserted in the center comes out
clean.
6. Let cool before enjoying!
Recipe makes 12 standard muffins.
